  • 1 Scotch bonnet pepper, finely chopped (adjust to taste)
  • 1 tsp paprika
  • 1 tsp pimento seeds (allspice berries), crushed or ground
  • Salt and black pepper to taste

  • 1 beaten egg or milk (for egg wash)

Instructions

  1. Make the Dough: Combine all-purpose flour and cold butter or shortening using your fingers or pastry cutter until the mixture resembles coarse crumbs. Stir in turmeric for color. Slowly add cold evaporated milk or water and knead gently until smooth. Wrap the dough in plastic wrap and chill for at least 30 minutes.
  2. Prepare the Filling: In a skillet over medium heat, sauté onions, garlic, and Scotch bonnet pepper until fragrant. Add ground beef (or protein choice), breaking it up as it cooks. Season with salt, pepper, paprika, and pimento seeds. Cook until browned and excess moisture evaporates. Remove from heat and cool slightly.
  3. Roll Out and Shape: On a floured surface, roll chilled dough to about 1/8 inch thickness. Cut into circles approximately 6 inches in diameter. Spoon filling onto one half of each circle, fold over to form a half-moon, and press edges firmly. Crimp edges with a fork to seal.
  4. Brush and Bake: Place patties on a parchment-lined baking sheet. Brush tops lightly with beaten egg or milk wash. Bake at 375°F (190°C) for 25 to 30 minutes, until golden and crisp.
