Scale

Main Ingredients

  • 2 cups cooked, shredded chicken breast
  • 6 strips crispy bacon, chopped
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 flour tortillas
  • 2 tablespoons butter or oil (for toasting)

Optional Veggies & Garnishes

  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • Chopped cilantro (for garnish)
  • Sliced avocado (for garnish)
  • Dollop of sour cream (for serving)

Instructions

  1. Prepare the Chicken and Bacon: Cook and shred the chicken breast if not already done. Fry bacon strips until crispy, drain on paper towels, then chop into bite-size pieces.
  2. Mix the Ranch and Chicken: In a bowl, combine the shredded chicken with ranch dressing until well-coated and flavorful.
  3. Build Your Quesadilla Layers: Lay one flour tortilla flat. Sprinkle a layer of shredded cheese, spread the ranch chicken mixture over the cheese, then scatter chopped crispy bacon pieces on top. Add another layer of cheese before placing a second tortilla over it.
  4. Cook the Stack: Heat a skillet or griddle over medium heat and add butter or oil. Carefully transfer the quesadilla stack and cook for 3-4 minutes per side, or until the tortillas are golden brown and the cheese has melted completely inside.
  5. Slice and Serve: Remove the quesadilla from heat and let it rest for a minute to allow layers to set. Use a sharp knife or pizza cutter to slice into wedges. Serve hot for the best melty, gooey experience.

Notes

  • Use fresh or homemade tortillas for better crispness and texture.
  • Do not overfill the quesadilla to prevent difficulty flipping and sogginess.
  • Cook on medium heat to melt cheese thoroughly without burning the tortillas.
  • Allow the quesadilla to rest slightly before cutting to maintain neat layers.
  • Experiment with different cheese blends to enhance flavor and meltability.
