Instructions

  1. Prep the Chicken and Veggies: Preheat the oven to 400°F (200°C). Trim the chicken breasts and pat them dry. Season the chicken lightly with salt, pepper, and Italian seasoning. Cut the zucchini and bell peppers into bite-sized pieces. Toss the vegetables with olive oil, salt, and pepper to coat evenly.
  2. Arrange and Bake the Veggies: Spread the prepared veggies evenly on a baking sheet or in a large oven-safe dish. Bake for about 10 minutes to start softening and caramelizing the vegetables.
  3. Add Chicken and Toppings: Remove the pan from the oven. Nestle the chicken breasts among the partially roasted veggies. Spoon marinara sauce generously over each chicken breast. Sprinkle shredded mozzarella and grated Parmesan cheese on top for a cheesy crust.
