Baked Mississippi Chicken

Baked Mississippi Chicken is an easy-to-make, flavor-packed dish featuring tender boneless chicken baked in a rich, creamy, buttery sauce with bold ranch and jalapeño flavors. Perfect for busy nights, it combines pantry staples to create a comforting, family-friendly meal that pairs well with a variety of sides.

Ingredients

Scale

Chicken

  • 4 boneless chicken breasts or thighs

Seasonings

  • 1 packet dry ranch dressing powder (about 1 ounce)
  • 1 packet ranch seasoning mix (optional, if using separate from dry ranch powder)

Dairy & Butter

  • 8 oz cream cheese, cubed and at room temperature
  • 4 tablespoons unsalted butter, cut into pieces

Peppers

  • 34 tablespoons pickled jalapeños, sliced
  • Optional: 3-4 pepperoncini peppers, sliced

Instructions

  1. Prepare the Chicken: Place boneless chicken breasts or thighs into a greased baking dish. Pat them dry with paper towels to ensure seasoning sticks and the chicken bakes evenly.
  2. Season the Chicken: Sprinkle dry ranch dressing powder generously over both sides of the chicken, coating it evenly to infuse flavor.
  3. Layer the Ingredients: Evenly distribute cream cheese cubes over the chicken pieces. Top with sliced pickled jalapeños and, if using, pepperoncini peppers. Dot the entire dish with pieces of butter to add richness.
  4. Bake Low and Slow: Cover the baking dish with foil, then bake in a preheated oven at 350°F (175°C) for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and is tender.
  5. Serve and Enjoy: Remove from the oven, uncover, and gently stir the sauce to combine melted cream cheese, butter, and ranch seasoning. Spoon the sauce over the chicken and serve hot.

Notes

  • Use room temperature cream cheese to help it melt evenly and blend smoothly into the sauce.
  • Don’t skip the butter—it provides a rich, silky finish that enhances the dish.
  • Keep the dish covered while baking to maintain moisture and creaminess.
  • Adjust the quantity of jalapeños to manage the heat level, as their spice can vary.
  • Let the chicken rest for 5 minutes after baking to redistribute juices and maximize tenderness.
