Ingredients

Scale

Chicken and Skewers

  • 1 lb boneless chicken breasts or thighs, cut into bite-sized pieces
  • 8 wooden or metal skewers (if wooden, soaked in water for at least 30 minutes)

Seasonings

  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt, to taste
  • 1 tbsp fresh lime juice

Bang Bang Sauce

  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce (gluten-free if necessary)
  • 12 tsp sriracha (adjust to taste)
  • 1 tbsp honey

Garnish

  • Chopped scallions, for garnish
  • Chopped fresh cilantro, for garnish

Instructions

  1. Prepare the Chicken: Cut the chicken into bite-sized, evenly sized pieces to ensure uniform cooking. Toss the chicken with garlic powder, paprika, salt, and fresh lime juice, coating all pieces evenly for an initial flavor boost.
  2. Assemble the Skewers: Thread the seasoned chicken pieces onto the soaked skewers, spacing them slightly apart to allow for even cooking and proper glaze coverage.
  3. Make the Bang Bang Sauce: In a bowl, combine mayonnaise, sweet chili sauce, sriracha, and honey. Whisk thoroughly until smooth and creamy. Taste and adjust the seasoning or spice level as desired.
  4. Cook the Skewers: Grill the skewers over medium-high heat, turning every few minutes. Cook until the chicken is golden brown with slight char and reaches an internal temperature of 165°F (75°C).
  5. Glaze and Serve: While the skewers are still warm, brush them generously with the Bang Bang sauce. Garnish with chopped scallions and cilantro before serving.

Notes

  • Marinate Briefly: Even a 15-minute marinade enhances flavor without delaying prep time.
  • Use Even Pieces: Uniform chicken sizes ensure juicier, evenly cooked skewers.
  • Don’t Overcrowd the Grill: Leave space between skewers for better heat circulation and charring.
  • Soak Wooden Skewers: Prevent burning by soaking wooden skewers in water for at least 30 minutes before use.
  • Adjust Sauce Consistency: Thin out Bang Bang sauce with water or lime juice if it’s too thick for easier coating.
  • Rest Before Serving: Let skewers rest a couple of minutes after grilling to lock in juices.
