Instructions

  1. Prep the Salmon: Cut fresh salmon fillets into bite-sized cubes approximately 1-2 inches wide. Ensure uniform size for even cooking and pat them dry thoroughly with paper towels to remove excess moisture.
  2. Season and Coat: Sprinkle garlic powder and salt evenly over the salmon cubes. Toss gently in panko breadcrumbs (or gluten-free substitute) to coat each piece lightly but thoroughly.
  3. Cook the Salmon Bites: For frying: Heat vegetable or avocado oil in a skillet over medium-high heat. Fry salmon bites in batches, turning occasionally for 3-4 minutes per batch until golden brown and cooked through. Drain on paper towels.
    For baking (alternative method): Preheat oven to 425°F (220°C). Arrange coated salmon bites on a lined baking tray and bake for 12-15 minutes until crispy and cooked through, flipping halfway.
  4. Prepare the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sriracha, honey or sweet chili sauce, and rice vinegar or lime juice. Adjust the sweetness or heat according to your preference.
