Ingredients

Scale

Main Ingredients

  • 1 lb ground beef (preferably 80/20 for flavor and moisture)
  • 68 bacon strips, cooked until crispy and chopped
  • 1 cup sharp cheddar cheese, shredded
  • 1 sheet puff pastry, thawed and rolled out
  • 1/2 cup diced onions
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 1 egg, beaten (for egg wash)

Instructions

  1. Cook the Bacon: Fry the bacon strips in a skillet over medium heat until crispy. Remove and drain on paper towels, then roughly chop into bite-sized pieces.
  2. Prepare the Beef Mixture: In the same skillet, cook diced onions until translucent. Add ground beef, garlic powder, salt, and pepper, breaking up the meat as it cooks until fully browned and juicy. Drain excess fat, stir in chopped bacon, then remove from heat.
  3. Assemble the Bombs: Roll out puff pastry sheets on a lightly floured surface. Cut into squares large enough to hold a spoonful of the beef-bacon mixture and some shredded cheddar cheese. Place the filling in the center of each square.
  4. Seal and Brush: Fold the pastry over the filling to form a neat packet. Seal edges firmly by pinching or crimping with a fork. Brush each bomb with beaten egg for a shiny, golden finish.
  5. Bake to Perfection: Arrange bombs on a parchment-lined baking sheet and bake at 400°F (200°C) for 15–20 minutes until puffed and golden brown. Let cool slightly before serving.

Notes

  • Use cold puff pastry to ensure it puffs well during baking.
  • Don’t overfill the bombs to prevent leaking.
  • Pre-cook beef and bacon to save time and avoid sogginess.
  • Seal edges with water or egg wash for better adhesion.
  • Try mixing cheeses or adding American cheese for different melty textures.
