  • 3 cloves garlic, finely chopped
  • ¼ cup red wine or beef broth
  • ¼ cup reserved pasta water (as needed)
  • ¼ cup grated Parmesan cheese
  • Fresh herbs (basil, parsley, or thyme), for garnish
  • Salt and black pepper, to taste

Instructions

  1. Prepare the Steak: Season the beef steak generously with salt and black pepper. Heat a cast-iron skillet or heavy pan until very hot. Sear the steak for 3-4 minutes on each side for medium-rare, or cook longer to your preferred doneness. Remove from heat and let the steak rest to allow the juices to redistribute.
  2. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain the pasta, reserving about ¼ cup of pasta water for the sauce.
  3. Create the Sauce Base: In the same skillet used for the steak, add olive oil and sauté the finely chopped garlic until fragrant but not browned. Deglaze the pan with red wine or beef broth, scraping up browned bits to build flavor.
  4. Combine Pasta and Sauce: Add the cooked pasta to the skillet with the sauce base, tossing well to coat. If the sauce is too dry, gradually add the reserved pasta water until the desired consistency is achieved.
  5. Slice and Serve: Slice the rested steak thinly against the grain and arrange on top of the pasta. Garnish with fresh herbs and a generous sprinkle of grated Parmesan cheese before serving.
