Instructions

  1. Prepare the Chicken: Rinse the whole chicken and pat it dry with paper towels. Season generously inside and out with salt, pepper, and poultry seasoning to enhance flavor and ensure juicy meat.
  2. Make the Dressing Base: In a skillet, sauté the chopped celery and onion in butter over medium heat until they are tender and fragrant. This step builds the foundational flavor of the dressing.
  3. Combine Dressing Ingredients: In a large bowl, place the bread cubes and toss with the sautéed vegetables. Gradually pour in warm chicken broth, stirring until the mixture holds together but is not soggy. Season with additional salt, pepper, and herbs if desired.
