Ingredients

Scale

Vegetables and Protein

  • 2 cups broccoli florets (fresh or frozen)
  • 2 cups cooked chicken breast, diced or shredded
  • 1 medium onion, diced
  • 2 cloves garlic, minced

Base and Dairy

  • 3 cups cooked long grain or jasmine rice
  • 1 can (10.5 oz) condensed cream of chicken or mushroom soup
  • 1 cup milk
  • 2 cups shredded sharp cheddar cheese, divided
  • 2 tablespoons butter

Seasonings and Toppings

  • Salt, to taste (about 1 teaspoon)
  • Black pepper, to taste (about 1/2 teaspoon)
  • 1/2 teaspoon paprika
  • 1/2 cup bread crumbs (optional, for topping)

Instructions

  1. Prepare the Ingredients: Cook rice according to package instructions. Steam fresh broccoli florets lightly or thaw and drain frozen broccoli. Dice or shred cooked chicken breast and shred the cheddar cheese.
  2. Sauté Aromatics: In a large skillet, melt the butter over medium heat. Add diced onions and minced garlic, sauté until fragrant and translucent to build a flavorful base.
  3. Combine the Mixture: In a large bowl, mix together cooked rice, broccoli, chicken, sautéed onions and garlic, condensed cream soup, milk, and half of the shredded cheddar cheese. Season with salt, pepper, and paprika. Stir gently to combine thoroughly.
  4. Assemble and Bake: Pour the mixture into a greased casserole dish. Sprinkle the remaining cheese evenly on top and add breadcrumbs if using for a crispy topping. Bake in a preheated oven at 350°F (175°C) for 25-30 minutes or until bubbly and golden on top.
  5. Let it Rest and Serve: Remove from the oven and let the casserole rest for 5-10 minutes to firm up and enhance flavors before serving.

Notes

  • Use day-old rice for better texture in casseroles.
  • Steam broccoli just until tender to maintain crunch and bright color.
  • Distribute cheese inside and on top for creamy and crispy textures.
  • Make your own cream sauce to replace condensed soups for a fresher taste.
  • Cover with foil for the first half of baking to prevent cheese burning, then uncover to brown.
