Ingredients

Scale

Main Ingredients

  • 4 large Russet Potatoes, peeled and diced
  • 1 medium Onion, finely chopped
  • 3 cloves Garlic, minced
  • 1 cup Bell Peppers, chopped (mix of colors recommended)
  • 4 cups Chicken or Vegetable Broth
  • 1 cup Heavy Cream or Milk

Spices and Seasoning

  • 2 tablespoons Cajun Seasoning (adjust to taste)
  • Salt and Pepper to taste

Optional Ingredients

  • 4 slices Bacon, chopped (optional but recommended)
  • Green Onions, sliced for garnish

Instructions

  1. Prepare Your Ingredients: Peel and dice the potatoes into bite-sized chunks. Finely chop the onion, garlic, and bell peppers. If using bacon, chop it into small pieces as well.
  2. Cook the Bacon and Vegetables: In a large pot, cook the bacon pieces over medium heat until crispy. Remove the bacon with a slotted spoon, leaving the rendered fat in the pot. Add the onion, garlic, and bell peppers to the pot and sauté until softened and fragrant.
  3. Add Potatoes and Seasonings: Return the bacon to the pot and stir in the diced potatoes. Sprinkle the Cajun seasoning evenly over the ingredients and stir well to coat everything.
  4. Pour in Broth and Simmer: Add the chicken or vegetable broth, making sure the potatoes are fully covered. Bring the soup to a boil, then reduce the heat and let it simmer gently for 20–25 minutes until the potatoes are tender.
  5. Finish with Cream and Adjust Seasoning: Lower the heat and stir in the heavy cream or milk to achieve a rich, creamy texture. Taste the soup and adjust salt, pepper, or Cajun seasoning as desired.
  6. Garnish and Serve: Ladle the soup into bowls and garnish with sliced green onions or fresh herbs for a bright and flavorful finish. Optionally, add shredded cheddar cheese, crumbled bacon, or a dollop of sour cream.

Notes

  • Use Russet potatoes for their starchy texture, which helps achieve a creamy consistency.
  • Be cautious about salting early, as Cajun seasoning often contains salt; adjust seasoning after simmering.
  • Simmer the soup gently to avoid breaking down the potatoes too much or burning the bottom of the pot.
  • For extra creaminess, blend a portion of the soup with an immersion blender.
  • Adjust the spice level gradually to balance the heat according to your preference.
