  • 8 ounces cremini or white button mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 shallots, minced
  • 1 cup Marsala wine
  • 1 cup chicken broth
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Prepare and Season the Chicken: Pound the chicken breasts to an even thickness to ensure they cook evenly. Lightly season both sides with salt and pepper, then dredge them in flour to create a delicate crust that will help thicken the sauce.
  2. Sauté the Chicken: Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Add the chicken breasts and cook until golden brown on both sides, about 3-4 minutes per side. Remove the chicken from the skillet and set aside.
  3. Cook the Mushrooms and Aromatics: Add the remaining tablespoon of butter to the skillet if needed, then sauté the sliced mushrooms, minced garlic, and shallots until softened and fragrant. Allow the mushrooms to brown slightly and release their juices to build flavor.
  4. Deglaze with Marsala Wine: Pour the Marsala wine into the skillet to deglaze, scraping up any browned bits from the bottom. Let the wine reduce by half to concentrate its sweet and savory flavors.
  5. Add Broth and Simmer: Pour in the chicken broth and bring the mixture to a simmer. Return the chicken breasts to the skillet and cook until the sauce thickens and the chicken is cooked through, approximately 5-7 minutes.
  6. Finish and Garnish: Remove the skillet from heat and stir in the chopped fresh parsley. Taste and adjust seasoning with salt and pepper as needed before serving.
