Instructions

  1. Prepare the noodles and broccoli: Boil the egg noodles following package instructions until al dente. Steam or blanch the broccoli florets until bright green and tender-crisp. Drain both and set aside.
  2. Cook and shred the chicken: Poach or bake chicken breasts until cooked through, then shred them into bite-sized pieces using forks or a shredder.
  3. Make the creamy cheese sauce: In a saucepan, melt butter over medium heat. Whisk in flour to create a roux and cook for about a minute. Gradually add milk while whisking to avoid lumps. Stir in cream of chicken soup, sour cream, sautéed garlic, and onions. Add shredded cheddar cheese a handful at a time, stirring until melted and the sauce is smooth and creamy.
  4. Combine all ingredients: In a large mixing bowl, gently mix the cooked noodles, shredded chicken, broccoli, and cheese sauce until everything is evenly coated.
  5. Bake the casserole: Transfer the mixture to a greased casserole dish. Top with extra shredded cheese if desired. Bake in a preheated oven at 350°F (175°C) for 25-30 minutes or until bubbly and golden on top.
  6. Let it rest and serve: Allow the casserole to rest for about 5 minutes after baking to let the flavors meld and to ease serving.
