Instructions

  1. Prepare the Chicken: Start by cooking the chicken breast or thighs in a pot with a bit of olive oil, seasoning lightly with salt and pepper. Once cooked through, shred the chicken using two forks and set aside.
  2. Sauté Aromatics: In the same pot, add diced onions and minced garlic, sautéing until fragrant and translucent, which builds the flavor base of the soup.
  3. Combine Core Ingredients: Add diced tomatoes, black beans, corn, chicken broth, and taco seasoning to the pot. Stir everything together, then bring the mixture to a gentle boil.
  4. Add Shredded Chicken: Return the shredded chicken to the pot and reduce the heat to simmer for 15 to 20 minutes, allowing all flavors to meld beautifully.
