Instructions

  1. Prepare the Ingredients: Thinly slice the chicken breast and zucchini into bite-sized pieces. Mince the garlic and grate the fresh ginger. Measure all your sauce ingredients beforehand as stir frying occurs quickly once the pan is hot.
  2. Make the Sauce: In a small bowl, combine soy sauce, honey or brown sugar, grated ginger, and red pepper flakes if using. Stir well to blend. Optionally, mix in the cornstarch dissolved in water to thicken the sauce during cooking.
  3. Cook the Chicken: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook for 4-5 minutes until golden brown and cooked through. Remove the chicken and set aside to keep warm.
  4. Stir Fry the Zucchini: In the same pan, add remaining oil if needed and toss in the minced garlic. Once fragrant, add the zucchini slices and stir fry for 2-3 minutes until tender but still crisp.
  5. Combine and Finish: Return the chicken to the pan, pour in the prepared sauce, and toss together over medium heat. Cook for an additional 2 minutes until the sauce thickens and coats the chicken and zucchini. Garnish with sliced green onions before serving.
