Ingredients

Scale

Dry Ingredients

  • 1 and 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 and 1/2 teaspoons baking powder
  • 1 and 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 cups granulated sugar

Wet Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup vegetable oil
  • 2 large eggs (room temperature)
  • 1 cup milk or buttermilk (room temperature)
  • 2 teaspoons vanilla extract

Optional

  • 3/4 cup chocolate chips or chopped chocolate

Instructions

  1. Prep Your Pans and Ingredients: Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans or line them with parchment paper. Measure out all ingredients before starting to keep the process smooth.
  2. Mix Dry Ingredients: In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt to ensure even distribution and avoid clumps.
  3. Cream Butter and Sugar: In a separate large mixing bowl, whisk the softened butter with granulated sugar using a hand or stand mixer until light and fluffy, aerating the mixture for volume and richness.
  4. Add Eggs and Vanilla: Beat in the eggs one at a time, fully incorporating each before adding the next. Stir in vanilla extract for enhanced chocolate flavor.
  5. Alternate Adding Dry Ingredients and Milk: Begin adding the dry mixture and milk alternately to the batter, starting and ending with dry ingredients. Mix gently between additions to keep the batter smooth and avoid overmixing.
  6. Fold in Chocolate Chips: Gently fold in chocolate chips or chunks for extra gooey pockets of melted chocolate throughout the cake.
  7. Bake to Perfection: Pour the batter evenly into prepared pans and bake for 30 to 35 minutes. The cake is done when a toothpick inserted into the center comes out with a few moist crumbs.
  8. Cool and Layer: Let the cakes cool in the pans for 10 minutes before transferring to a wire rack. Once completely cool, layer with your favorite frosting such as chocolate fudge frosting or ganache.

Notes

  • Use room temperature eggs, butter, and milk for a smooth batter.
  • Do not overmix the batter to keep the crumb tender and light.
  • Opt for high-quality cocoa powder, preferably Dutch-processed, for the richest flavor.
  • Check oven temperature with a thermometer to avoid drying out the cake.
  • Allow the cake to cool fully before frosting to prevent melting.
