Instructions

  1. Cook and Rinse the Noodles: Boil the rice noodles according to the package instructions until tender but still firm. Drain and rinse thoroughly with cold water to stop cooking and cool the noodles. Set aside.
  2. Prepare the Peanut-Lime Dressing: In a bowl, whisk together the peanut butter, fresh lime juice, soy sauce, honey or maple syrup, grated ginger, and minced garlic. Gradually add warm water and continue whisking until the dressing becomes smooth and pourable.
  3. Toss the Salad: In a large mixing bowl, combine the cooled noodles with shredded carrots, sliced bell peppers, chopped green onions, and fresh cilantro. Pour the peanut-lime dressing over the salad and toss gently until all ingredients are evenly coated.
