Ingredients

Scale

Protein

  • 1 lb ribeye or sirloin steak (well-marbled for tenderness)

Pasta

  • 8 oz linguine pasta

Vegetables

  • 2 cups broccoli florets (fresh or frozen)

Cowboy Butter Sauce

  • 4 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tbsp fresh lemon juice
  • Salt, to taste
  • Black pepper, to taste

Other

  • 2 tbsp olive oil
  • 2 tbsp fresh parsley, chopped (for garnish)
  • Additional salt and black pepper for seasoning steak and broccoli

Instructions

  1. Prepare the Steak: Season the ribeye or sirloin steak generously with salt and black pepper. Heat olive oil in a skillet over medium-high heat and sear the steak for 4-5 minutes on each side for medium-rare, or cook according to your preferred doneness. Remove the steak from the pan and let it rest for 5-10 minutes to lock in the juices.
  2. Cook the Linguine: Bring a large pot of salted water to a boil. Add linguine and cook according to package instructions until al dente. Drain the pasta, reserving about 1 cup of pasta water to adjust the sauce consistency later if needed.
  3. Steam or Sauté Broccoli: While the pasta cooks, either steam the broccoli florets until bright green and just tender or sauté them lightly in a splash of olive oil with a pinch of salt for slight caramelization and added flavor.
  4. Make the Cowboy Butter Sauce: In the same skillet used to cook the steak, melt the butter over medium heat. Add the minced garlic and smoked paprika, cooking and stirring until fragrant. Stir in fresh lemon juice, salt, and black pepper, combining well to create a rich, tangy cowboy butter sauce.
  5. Combine and Serve: Add the cooked linguine and broccoli to the skillet with the cowboy butter sauce. Toss gently to coat everything evenly, using reserved pasta water a little at a time to loosen the sauce if needed. Slice the rested steak into thin strips and either arrange on top of the pasta or mix in. Garnish with freshly chopped parsley before serving.

Notes

  • Resting the steak for 5-10 minutes after cooking enhances tenderness and juiciness.
  • Reserve some pasta water to fine-tune the sauce texture and ensure it clings to the pasta beautifully.
  • Use freshly minced garlic instead of pre-minced for brighter, more vibrant flavor.
  • Preheat your pan thoroughly for a great sear and delicious caramelized crust on the steak.
  • Avoid overcooking broccoli to maintain its bright color and crisp-tender texture.
