Ready in under 30 minutes, this comforting dish combines simple ingredients to create an elegant, flavorful meal perfect for weeknights or special occasions.

Ingredients

Scale

Chicken

  • 2 boneless, skinless chicken breasts

Cheese and Dairy

  • 1 cup freshly grated Asiago cheese
  • 1 cup heavy cream

Produce

  • 3 garlic cloves, minced
  • 2 cups fresh spinach leaves

Other

  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp olive oil or butter
  • 1/4 cup chicken broth (optional)

Instructions

  1. Prepare the Chicken: Season the chicken breasts generously with salt and pepper on both sides. Heat olive oil or butter in a large skillet over medium heat. Sear the chicken until golden brown on each side, about 4 to 5 minutes per side. Remove the chicken from the pan and set aside.
  2. Create the Cream Sauce: Reduce the heat slightly and add minced garlic to the same skillet. Sauté for about 30 seconds until fragrant. Pour in the heavy cream and optional chicken broth, stirring and scraping up any browned bits from the pan bottom. Let the sauce simmer gently until it thickens.
  3. Incorporate Asiago Cheese and Spinach: Slowly add the grated Asiago cheese to the sauce, stirring constantly to melt it smoothly. Add fresh spinach leaves and stir until they wilt and blend into the sauce.
  4. Combine Chicken with Sauce: Return the chicken breasts to the skillet, spoon the creamy Asiago sauce over them. Cook together for a few more minutes until the chicken’s internal temperature reaches 165°F (74°C) and the flavors meld.
  5. Serve Warm and Enjoy: Plate the chicken with a generous drizzle of sauce. Serve immediately while the sauce is velvety and warm.

Notes

  • Pat chicken dry before searing to get a golden crust.
  • Use freshly grated Asiago cheese for best melting and flavor.
  • Simmer sauce gently on low heat to prevent cream from curdling.
  • Do not overcrowd the pan; cook chicken in batches if needed for even browning.
  • Rest chicken before slicing to keep it juicy and tender.
