Ingredients

Scale

Main Ingredients

  • 1 package frozen potato and cheese pierogis (about 16 oz)
  • 1 lb kielbasa sausage, sliced into bite-sized pieces
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup sour cream
  • 1 cup chicken broth
  • 1 1/2 cups shredded cheese (cheddar or a cheddar-mozzarella blend)
  • Salt, to taste
  • Black pepper, to taste
  • Optional: 1/2 teaspoon paprika

Optional Garnishes and Variations

  • Fresh parsley, chopped (for garnish)
  • Red pepper flakes or jalapeños (for spicy kick)
  • Mushrooms or smoked tofu (vegetarian kielbasa substitute)
  • Additional veggies like sautéed bell peppers, spinach, or kale
  • Alternative cheeses: mozzarella, pepper jack, gouda
  • Fresh herbs such as thyme or dill

Instructions

  1. Prepare the Kielbasa and Aromatics: Slice the kielbasa into bite-sized pieces and sauté it with diced onions and minced garlic in a skillet until the kielbasa is slightly browned and the aromatics are softened, releasing their flavors.
  2. Layer the Pierogis and Kielbasa: In the crockpot, evenly place half of the frozen pierogis at the bottom. Add the sautéed kielbasa mixture on top, then layer the remaining pierogis over it.
  3. Mix and Add the Creamy Sauce: In a bowl, whisk together sour cream, chicken broth, shredded cheese, salt, pepper, and paprika if using. Pour this sauce evenly over the pierogi and kielbasa layers.
  4. Cook Low and Slow: Cover the crockpot and cook on low heat for 4 to 5 hours, allowing the pierogis to become tender and the flavors to meld fully.
  5. Garnish and Serve: Once cooked, sprinkle freshly chopped parsley on top for a bright contrast. Serve hot and optionally add extra sour cream or chives as desired.

Notes

  • Use frozen pierogis directly; no need to thaw to maintain texture.
  • Do not overfill the crockpot; leave space for steam to circulate evenly.
  • Use a cheese blend like sharp cheddar and mozzarella for best melt and flavor.
  • Layer ingredients evenly for consistent flavor with each bite.
  • Resist cooking on high; low and slow cooking produces superior texture and flavor.
