Instructions

  1. Prepare the Fettuccine: Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook until al dente, about 8-10 minutes. Reserve 1 cup of pasta water before draining the pasta to help loosen the sauce if needed later.
  2. Cook the Chicken: While the pasta cooks, season the chicken breasts with salt and pepper. Heat olive oil or butter in a hot skillet and sear the chicken for 6-7 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and let it rest for a few minutes before slicing thinly.
  3. Make the Alfredo Sauce: In the same skillet, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and bring it to a gentle simmer, stirring frequently. Gradually whisk in the freshly grated Parmesan cheese until the sauce becomes smooth and thickened. Season with salt and pepper to taste.
  4. Combine Pasta and Sauce: Add the drained fettuccine to the skillet with the Alfredo sauce. Toss gently to coat each strand evenly. If the sauce is too thick, stir in the reserved pasta water a little at a time until you reach your desired consistency.
  5. Add Chicken and Serve: Return the sliced chicken to the skillet, mixing it thoroughly with the pasta and sauce for even distribution. Garnish with chopped fresh parsley, adjust seasoning with salt and pepper if needed, and serve immediately while warm and inviting.
