Instructions

  1. Prepare Your Ingredients: Peel and devein the prawns if not already done. Finely chop the garlic and onion or shallots. Roughly chop the sun dried tomatoes and fresh spinach to have all ready ahead for smooth cooking.
  2. Sauté Aromatics and Prawns: Heat olive oil and butter in a large skillet over medium heat. Add the garlic and onion and cook until fragrant and translucent, about 2-3 minutes. Add the prawns and sauté 2-3 minutes per side, until pink and just cooked through. Remove prawns from the skillet and set aside.
  3. Create the Creamy Tuscan Sauce: In the same pan, add the chopped sun dried tomatoes and Italian herbs to the remaining oil and butter. Stir to combine, then pour in the heavy cream. Let simmer gently over low heat until the sauce thickens slightly, about 3-5 minutes. Stir in freshly grated parmesan cheese until the sauce is silky and smooth.
  4. Add Spinach and Combine: Add the fresh spinach leaves to the sauce and cook until wilted, about 1-2 minutes. Return the cooked prawns to the pan and toss gently to coat evenly with the creamy sauce. Season with salt and pepper to taste.
