Ingredients

Scale

Chicken and Coating

  • 2 boneless, skinless chicken breasts, sliced into 12 inch pieces
  • 1/2 cup cornstarch
  • 1/2 teaspoon garlic powder
  • Salt, to taste
  • Black pepper, to taste
  • Cooking oil (neutral oil with high smoke point), for frying

Bang Bang Sauce

  • 1/3 cup mayonnaise
  • 2 tablespoons sriracha (adjust to taste)
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar

Instructions

  1. Prepare the Chicken: Slice chicken breasts into bite-sized pieces about 1-2 inches each. Pat dry thoroughly with paper towels to remove moisture for better crispiness.
  2. Coat the Chicken: In a shallow bowl, mix cornstarch, garlic powder, salt, and pepper. Toss chicken pieces in this dry mixture until evenly coated, ensuring a crispy crust with minimal oil absorption.
  3. Fry the Chicken: Heat a few tablespoons of neutral oil in a large skillet over medium-high heat. Fry chicken pieces in batches for 3-4 minutes per side, or until golden brown and cooked through. Remove and drain on paper towels to remove excess oil.
  4. Make the Bang Bang Sauce: While frying, whisk together mayonnaise, sriracha, honey, and rice vinegar in a bowl. Taste and adjust the balance of sweet, spicy, and tangy to preference.
  5. Combine and Serve: Gently toss the cooked chicken pieces in the bang bang sauce until fully coated. Serve immediately while hot and crispy for optimal texture and flavor.

Notes

  • Use room temperature chicken for even cooking and better crispiness.
  • Do not overcrowd the pan; fry in batches to maintain oil temperature and crispness.
  • Pat chicken dry thoroughly before coating to ensure a crunchy crust.
  • If the bang bang sauce is too thick, thin it with a splash of water to coat evenly.
  • Serve immediately to maintain crunchy texture; the chicken will lose its crispiness if left sitting in sauce too long.
