Crispy Bang Bang Salmon Bites are tender salmon pieces coated in a spicy, crunchy panko crust and tossed in a creamy, zingy bang bang sauce. Quick to prepare and packed with flavor, these bites offer a perfect balance of texture and heat, making them an irresistible appetizer, snack, or main dish.

Ingredients

Scale

Salmon and Coating

  • 1 lb fresh skinless, boneless salmon fillets, cut into 1-inch cubes
  • 1 cup panko breadcrumbs (use gluten-free panko for gluten-free option)
  • ½ cup all-purpose flour (gluten-free flour for gluten-free option)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 2 large eggs, beaten (for egg wash)
  • Neutral high smoke point oil for frying (canola, vegetable, or peanut oil)

Bang Bang Sauce

  • ½ cup mayonnaise (use vegan mayo for dairy-free option)
  • 2 tbsp sriracha (adjust for spice preference)
  • 1 tsp fresh lime juice
  • 1 tsp honey or sugar (optional, to balance heat)

Instructions

  1. Prepare the Salmon: Cut the fresh salmon fillets into roughly one-inch bite-sized cubes. Pat them dry thoroughly with paper towels to remove excess moisture, which helps the coating stick and ensures a crisp fry.
  2. Set Up Breading Stations: Arrange three shallow dishes: one with flour combined with garlic powder and paprika, the second with beaten eggs for egg wash, and the third with panko breadcrumbs. This setup allows for an even and thorough coating on each piece.
  3. Coat the Salmon: Dip each salmon cube first into the flour mixture, shaking off any excess. Next, dip into the egg wash, then roll thoroughly in the panko breadcrumbs until fully coated. Place the coated pieces on a wire rack or parchment-lined tray to rest briefly.
  4. Fry Until Golden: Heat oil in a frying pan over medium-high heat. Fry the salmon bites in batches, cooking each side for 2 to 3 minutes or until golden brown and crispy. Avoid overcrowding the pan to ensure even cooking and maintain crispness.
  5. Prepare the Bang Bang Sauce: In a small bowl, mix mayonnaise, sriracha, fresh lime juice, and honey or sugar. Adjust the spice level to taste by adding more or less sriracha.
  6. Toss and Serve: Gently toss the hot, crispy salmon bites in the prepared bang bang sauce until evenly coated. Serve immediately for the perfect combination of crispy texture and creamy, spicy flavor.

Notes

  • Thoroughly pat salmon dry before breading to help the coating stick better and stay crispy.
  • Maintain medium-high heat when frying to prevent soggy bites and ensure salmon cooks through without burning.
  • Fry in small batches to give each bite enough space for an even, crispy crust.
  • Use panko breadcrumbs for a lighter, crunchier crust compared to traditional breadcrumbs.
  • Customize the bang bang sauce by adjusting the mayo, sriracha, and lime to suit your preferred spice level.
