Ingredients

Scale

Chicken & Broth

  • 23 bone-in, skinless chicken breasts or thighs
  • 6 cups chicken broth

Vegetables & Aromatics

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 12 sprigs fresh thyme or 2 tbsp fresh parsley, chopped

Roux (Thickener)

  • 3 tbsp butter
  • 3 tbsp all-purpose flour

Dairy & Noodles

  • 1 cup heavy cream or half-and-half
  • 2 cups egg noodles

Seasoning

  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Base: Sauté chopped onions, garlic, carrots, and celery in butter over medium heat until they become fragrant and soft, creating a rich flavor foundation for the soup.
  2. Add Chicken and Broth: Place the chicken breasts or thighs into the crockpot. Pour in the chicken broth, add the sautéed vegetables, fresh herbs, salt, and pepper.
  3. Slow Cook: Set the crockpot to low and cook gently for 6-7 hours, allowing the chicken to become tender and the flavors to meld.
  4. Shred Chicken and Make Roux: Remove the chicken and shred it using forks. In a separate pan, melt butter and whisk in flour, cooking gently to form a roux that will thicken the soup and add creaminess.
  5. Combine Cream and Noodles: Return shredded chicken to the crockpot, add the roux, then stir in heavy cream or half-and-half. Finally, add the egg noodles and cook on high for 20-30 minutes until noodles are tender but not mushy.

Notes

  • Use bone-in chicken for deeper flavor, removing bones before serving.
  • Add noodles towards the end of cooking to avoid mushiness.
  • Add fresh herbs at the end for bright, fresh flavor.
  • Cook the roux separately to ensure a smooth, thickened soup without clumps.
  • Adjust the amount of cream to suit your preferred richness.
