Instructions

  1. Prepare Your Ingredients: Peel and dice the potatoes into evenly sized chunks for uniform cooking. Chop the onions and mince the garlic to allow their flavors to fully infuse during slow cooking.
  2. Cook the Bacon: In a skillet over medium heat, cook the bacon until crispy. Drain on paper towels and set aside, reserving about 1 tablespoon of bacon grease in the skillet.
  3. Sauté Onions and Garlic: Using the reserved bacon grease, sauté the chopped onions and minced garlic until softened and fragrant, about 3-4 minutes.
  4. Combine in Crockpot: Add the diced potatoes, sautéed onions and garlic, chicken broth, salt, and pepper into the crockpot. Stir gently to mix all ingredients evenly.
  5. Slow Cook: Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the potatoes are tender enough to mash easily with a fork.
  6. Add Cheese and Cream: About 30 minutes before serving, stir in the shredded cheddar cheese and sour cream (or cream cheese). Allow them to melt and blend completely into the soup.
