Instructions

  1. Prepare the White Chocolate Mascarpone Cream: Gently melt the white chocolate in a heatproof bowl over simmering water or in short bursts in the microwave. In a separate bowl, whisk together the egg yolks and sugar until pale and creamy. Fold the melted white chocolate and mascarpone cheese into the egg yolk mixture. Whip the heavy cream until soft peaks form and carefully fold it into the mascarpone mixture, creating a light yet rich filling.
  2. Soak Ladyfingers in Coffee: Pour freshly brewed espresso or strong coffee into a shallow dish. Quickly dip each ladyfinger into the coffee, ensuring not to oversaturate—just enough to soak the surface. Lay the soaked ladyfingers evenly in your serving dish to form the base layer.
  3. Assemble the First Layer: Spread half of the white chocolate mascarpone cream over the coffee-soaked ladyfingers. Sprinkle with a generous handful of chopped pistachios and some fresh raspberries to begin melding the flavors.
  4. Repeat Layers: Add another layer of soaked ladyfingers, then spread the remaining mascarpone cream on top. Finish with more fresh raspberries and chopped pistachios to decorate, creating a stunning contrast of colors and textures.
