Ingredients

Scale

Dry Ingredients

  • 2 ½ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt

Wet Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 4 large eggs
  • 1 tsp vanilla extract

Caramel Sauce

  • ½ cup unsalted butter
  • 1 cup brown sugar
  • ½ cup heavy cream

Additional

  • 1 cup toffee bits

Instructions

  1. Prepare the Cake Batter: Preheat your oven to 350°F (175°C) and grease your cake pans. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Gradually add the eggs one at a time, mixing well after each addition. In a separate bowl, combine the flour, baking powder, and salt. Alternate adding the dry ingredients and vanilla extract to the wet mixture, mixing until smooth and consistent.
  2. Bake the Cake Layers: Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Remove from oven and allow the layers to cool completely before assembling.
  3. Make the Caramel Sauce: In a medium saucepan over medium heat, melt the butter and brown sugar together, stirring constantly. Slowly whisk in the heavy cream and gently bring the mixture to a boil. Cook while stirring until the sauce thickens to a luscious caramel consistency. Remove from heat and set aside to cool slightly.
  4. Assemble the Cake: Place one cooled cake layer on a serving plate. Drizzle a generous amount of the warm caramel sauce over the layer and sprinkle evenly with toffee bits. Add the second cake layer on top and repeat the caramel drizzle and toffee sprinkle. Finish by covering the entire cake with remaining caramel sauce and toffee bits for maximum crunch and visual appeal.
  5. Chill and Serve: Refrigerate the assembled cake for at least one hour to allow the flavors to meld and the caramel to set. Before serving, optionally add extra toffee bits and a warm caramel drizzle on each slice for added flair.

Notes

  • Use room temperature ingredients to ensure a smooth, even batter.
  • Do not overbake to keep the cake moist and tender.
  • Making homemade caramel sauce adds superior flavor compared to store-bought products.
  • Measure cake layers and caramel amounts evenly for a balanced appearance and taste.
  • Add toffee bits at the last minute before serving to keep them crunchy.
