Ingredients

Scale

Main Ingredients

  • 1 lb cube steak (tenderized round or sirloin beef)
  • 1/2 cup all-purpose flour
  • Salt (to taste)
  • Black pepper (to taste)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 2 tbsp butter
  • 1 tbsp cooking oil (vegetable or olive oil)

Optional Ingredients for Sauce

  • 1 medium onion, sliced
  • 1 cup mushrooms, sliced
  • 1 cup beef broth or prepared gravy mix

Optional Variations & Seasonings

  • Buttermilk for marinating (Southern Style)
  • Rosemary and tomato-based sauce (Italian Flair)
  • Cayenne pepper and smoked paprika (for a spicy kick)
  • Steamed vegetables or cauliflower mash (low-carb sides)

Instructions

  1. Prepare the Cube Steak: Pat cube steaks dry with paper towels to remove excess moisture. Season both sides generously with salt, pepper, garlic powder, and paprika to ensure deep flavor penetration.
  2. Dredge in Flour: Place all-purpose flour on a plate and thoroughly coat each steak on both sides. This helps create a crispy crust and thickens the sauce later.
  3. Brown the Steaks: Heat butter and oil in a skillet over medium-high heat until shimmering. Add the steaks carefully and cook for 3-4 minutes per side until nicely browned, sealing in the juices.
  4. Make the Sauce: Remove the steaks and set aside. In the same pan, sauté sliced onions and mushrooms until tender if using. Pour in beef broth or prepared gravy mix, scraping the browned bits from the pan to build flavor. Simmer until the sauce thickens.
  5. Return Steaks to the Pan: Place the browned cube steaks back into the skillet. Coat them with the sauce and let everything simmer together over low heat for about 10 minutes to enhance tenderness and flavor absorption.
  6. Rest Before Serving: Remove the steaks from heat and let them rest for a few minutes to allow juices to redistribute before serving.

Notes

  • Use room temperature meat by resting cube steak for 15–20 minutes before cooking for even results.
  • Do not overcrowd the pan; cook in batches if necessary to ensure proper browning.
  • Simmer the steaks low and slow in the sauce for the best tenderness.
  • For thicker gravy, re-dredge the steaks in flour before adding the sauce.
  • Garnish with fresh parsley, chopped chives, or cracked black pepper for added freshness and color.
  • Store leftovers in airtight containers in the refrigerator for up to 3 days or freeze for up to 2 months.
  • Reheat gently with a splash of broth or water to keep the meat moist without toughening.
