Ingredients

Scale

Main Ingredients

  • 1 lb ground beef (lean or regular)
  • 1 cup shredded cheddar or American cheese
  • 1 sheet puff pastry or 1 package refrigerated pie dough
  • 1 small onion, diced
  • 2 tablespoons ketchup
  • 1 tablespoon mustard
  • Salt, to taste
  • Black pepper, to taste

Optional Add-Ins

  • Pickles or relish, diced
  • Diced jalapeños or hot sauce (for spicy kick)
  • Chopped bell peppers, mushrooms, or spinach (for veggie boost)
  • Ground turkey or chicken (as meat substitute)
  • Plant-based ground meat and dairy-free cheese (for vegan option)
  • Mozzarella cheese (for double cheese variation)

Instructions

  1. Cook the Ground Beef Mixture: Heat a skillet over medium heat and sauté diced onion until translucent. Add ground beef and cook until browned and fully cooked through. Drain excess fat. Stir in ketchup, mustard, salt, pepper, and any additional fillings like pickles or jalapeños. Let the mixture cool slightly to prevent soggy dough.
  2. Prepare the Dough: Roll out your puff pastry or refrigerated dough on a lightly floured surface. Cut into equal-sized squares or rectangles based on the pocket size you prefer.
  3. Assemble the Pockets: Place a generous spoonful of the beef mixture in the center of each dough square. Sprinkle shredded cheese over the filling. Fold the dough over the filling to form a pocket and seal the edges firmly with a fork.
  4. Bake to Golden Perfection: Transfer pockets onto a parchment-lined baking sheet. Brush tops lightly with beaten egg or milk for a golden finish. Bake in a preheated oven at 375°F (190°C) for 15-20 minutes until crust is puffed and golden brown.

Notes

  • Don’t overfill the pockets to avoid tearing or leaking during baking.
  • Keep dough cold until ready to use to maintain flakiness.
  • Use parchment paper on baking sheet to prevent sticking and ease clean-up.
  • Try different cheeses such as Swiss or pepper jack for unique flavors.
  • Serve warm straight from the oven for best taste and texture.
