Ingredients

Scale

Protein and Seasoning

  • 1 lb ground beef or turkey
  • 2 tbsp taco seasoning

Aromatics

  • 1 small onion, diced
  • 2 cloves garlic, minced

Beans and Vegetables

  • 1 cup refried beans
  • 1/2 cup salsa or diced tomatoes

Layers and Cheese

  • 810 tortilla wraps or taco shells
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese

Optional Toppings

  • Sour cream, for serving
  • Sliced avocado, for serving
  • Jalapeño slices, for serving
  • Fresh cilantro, for garnish
  • Chopped green onions, for garnish

Instructions

  1. Cook the meat and aromatics: In a large skillet over medium heat, brown the ground beef or turkey until fully cooked. Add diced onion and minced garlic, cooking until fragrant and soft. Stir in taco seasoning with a splash of water and simmer until the mixture thickens slightly and flavors meld.
  2. Prepare the refried beans and salsa: Warm refried beans in a saucepan. Stir in several spoonfuls of salsa or diced tomatoes to add moisture and tang. Set aside for layering.
  3. Assemble the layers: In a baking dish, spread a thin layer of the meat mixture on the bottom. Layer with tortillas or broken taco shells, followed by refried beans and a sprinkle of cheese. Repeat layers until all ingredients are used, finishing with a generous layer of shredded cheese on top.
  4. Bake until bubbly: Preheat oven to 375°F (190°C). Bake the assembled lasagna for 20 to 25 minutes until cheese is melted, bubbly, and lightly browned at the edges. Allow to cool for a few minutes before serving.

Notes

  • Use freshly grated cheese for better melting and enhanced flavor.
  • Avoid soaking tortillas too much to prevent soggy layers; use dry or lightly warmed tortillas.
  • Layer ingredients evenly to ensure thorough cooking and harmonious flavor blending.
  • If meat mixture appears dry, add a small amount of beef or chicken broth to maintain moisture.
  • Let the lasagna rest 5-10 minutes after baking to firm up layers and ease slicing.
