Instructions

  1. Cook the farro: Rinse 1 cup of farro under cold water. Cook it in boiling salted water for 20 to 25 minutes until tender but still chewy. Drain and allow it to cool to room temperature.
  2. Prepare the vegetables: While the farro cooks, chop the cucumber, halve the cherry tomatoes, finely chop the red onion, and pit and halve the Kalamata olives. Keep all pieces bite-sized for a balanced texture.
  3. Make the dressing: In a small bowl, whisk together 3 tablespoons of fresh lemon juice, 3 tablespoons of extra virgin olive oil, salt, and black pepper until well combined to create a tangy vinaigrette.
  4. Combine the salad: In a large bowl, toss the cooled farro with the chopped vegetables, olives, and crumbled feta cheese. Add the chopped fresh dill and pour the dressing over the salad, gently tossing everything to coat evenly.
  5. Chill and serve: Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together for the best taste.
