Ingredients

Scale

Protein

  • 1 lb chicken breast or thighs

Vegetables & Grains

  • 1 ½ cups rice (white, brown, or jasmine)
  • 1 ½ cups fresh corn kernels

Spices & Seasonings

  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • Salt and pepper to taste

Sauce & Toppings

  • ¼ cup mayonnaise or Greek yogurt
  • 2 tbsp fresh lime juice
  • ¼ cup chopped fresh cilantro
  • ¼ cup crumbled cotija cheese (optional)
  • Lime wedges for garnish

Instructions

  1. Prepare the Rice: Cook your choice of rice according to package instructions, seasoning lightly with salt. This will create the hearty base for your bowl and absorb flavors from the chicken and corn.
  2. Season and Cook the Chicken: Combine chili powder, smoked paprika, garlic powder, salt, and pepper to make a spice rub. Coat chicken thoroughly with the rub. Cook the chicken in a hot skillet or grill pan until the outside is charred and the inside is juicy and tender. Allow chicken to rest for a few minutes to lock in juices, then slice or chop.
  3. Prepare the Street Corn Topping: Sauté fresh corn kernels in a pan until slightly browned. In a bowl, mix mayonnaise (or Greek yogurt), fresh lime juice, chopped cilantro, and optional crumbled cotija cheese. Toss the sautéed corn with this creamy mixture to mimic traditional street corn flavors.
  4. Assemble the Bowl: Layer the cooked rice in serving bowls. Top with sliced chicken and generous portions of the creamy street corn mixture. Garnish with additional lime wedges and cilantro to brighten the dish.

Notes

  • Use fresh corn when possible for the best texture and sweetness; frozen corn can be used if thawed and drained well.
  • Don’t skimp on the chili powder and smoked paprika—these spices define the dish’s smoky flavor.
  • Rest the chicken after cooking to retain juiciness.
  • Prepare the creamy street corn sauce while the chicken cooks to save time.
  • Add crunch with toasted pepitas or crushed tortilla chips as an optional garnish.
