Ingredients

Scale

Sugar Cookie Dough

  • 1 store-bought or homemade sugar cookie dough (enough to roll into a 12-inch circle)

Cream Cheese Topping

  • 8 oz softened cream cheese
  • 3/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp lemon juice (optional, for brightness)

Fresh Fruit Toppings

  • 1 cup strawberries, sliced
  • 1 cup blueberries
  • 1 cup kiwi, peeled and sliced
  • 1 cup mandarin oranges, peeled
  • 1 tsp lemon juice (for spraying fruits to prevent browning)

Instructions

  1. Prepare the Sugar Cookie Crust: Roll out the sugar cookie dough onto a parchment-lined pizza pan into a smooth, even 12-inch circle about 1/4 inch thick. Bake in a preheated oven at 350°F (175°C) for 12-15 minutes until edges are lightly golden. Remove and cool completely to set the crust before adding topping.
  2. Make the Cream Cheese Topping: Beat together softened cream cheese, powdered sugar, vanilla extract, and lemon juice until smooth and fluffy. The mixture should be thick enough to hold fruit without sliding.
  3. Spread the Topping: Using an offset spatula or the back of a spoon, evenly spread the cream cheese mixture over the cooled sugar cookie crust, leaving a small border around the edges for a neat finish.
  4. Arrange the Fresh Fruits: Pat the fruit dry, then arrange them decoratively on top of the cream cheese layer or scatter for a natural look. Spray fruits lightly with lemon juice to keep them bright and prevent browning.
  5. Chill Before Serving: Place the fruit pizza in the refrigerator for at least 30 minutes to let the topping firm up and flavors meld. This step also makes slicing cleaner and the dessert more refreshing.

Notes

  • Use room temperature cream cheese for smoother topping consistency.
  • Do not overbake the sugar cookie crust; just bake until edges turn lightly golden for a soft yet sturdy base.
  • Always pat fruit dry to prevent the cookie crust from becoming soggy.
  • Chill the assembled pizza before serving to firm the topping and improve slicing.
  • Slice with a serrated knife for clean cuts through the cookie and fruits.
