A quick and healthy Ginger Soy-Glazed Cod recipe bursting with bold Asian-inspired flavors. Ingredients

Scale

Fish

  • 4 fresh cod fillets (firm, thick, about 6 oz each)

Glaze

  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 1 tablespoon fresh ginger, grated
  • 2 garlic cloves, minced
  • 1 tablespoon honey or brown sugar
  • 1 tablespoon rice vinegar or lime juice
  • 1 teaspoon sesame oil

For Cooking & Garnish

  • 1 teaspoon neutral cooking oil (for pan)
  • 2 green onions, thinly sliced
  • Optional: pinch of red pepper flakes

Instructions

  1. Prepare the Glaze: In a small bowl, whisk together soy sauce, freshly grated ginger, minced garlic, honey (or your preferred sweetener), rice vinegar, and sesame oil until smooth. This glaze will give the cod its signature glossy, flavorful coating.
  2. Marinate the Cod: Place the cod fillets in a shallow dish and pour half of the glaze over them. Let the fish marinate for about 10-15 minutes in the fridge, allowing those fresh flavors to soak through while you prepare your cooking surface.
  3. Cook the Cod: Heat a non-stick skillet or cast iron pan over medium-high heat. Add a small drizzle of neutral oil and place the cod fillets skin-side down if they have skin. Cook for about 3-4 minutes on each side, basting with the remaining glaze until the fish is cooked through and the outside is caramelized.
  4. Garnish and Serve: Transfer the glazed cod to a serving plate and spoon any leftover sauce from the pan over the top. Sprinkle with thinly sliced green onions and, if you like, a pinch of red pepper flakes to brighten every bite.

Notes

  • Fresh is Best: Use fresh ginger and garlic for the most vibrant, zesty flavor.
  • Don’t Overcook: Cod cooks quickly, so keep an eye to avoid drying it out.
  • Pat Dry the Fish: Before marinating, pat cod dry to help the glaze stick better and achieve a nice sear.
  • Warm Pan, Not Too Hot: A moderately hot pan prevents burning the glaze while caramelizing the fish.
  • Double the Glaze: Make extra glaze for drizzling to boost flavor at serving time.
