Ingredients

Scale

Meatballs

  • 1 lb ground turkey
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 tsp dried oregano
  • 2 tbsp fresh parsley, chopped
  • 1/2 cup breadcrumbs (use gluten-free if desired)
  • 1 large egg
  • Salt and pepper, to taste
  • 12 tbsp olive oil (for cooking)

Tzatziki Sauce

  • 1 cup Greek yogurt
  • 1/2 medium cucumber, grated and excess moisture squeezed out
  • 1 clove garlic, minced
  • 1 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • Salt and pepper, to taste

Instructions

  1. Prepare the Meatball Mixture: In a large mixing bowl, combine the ground turkey, minced garlic, finely chopped onion, dried oregano, chopped parsley, breadcrumbs, egg, salt, and pepper. Mix gently until ingredients are just combined to keep the meatballs tender and juicy.
  2. Form the Meatballs: Use your hands or a small ice cream scoop to shape the mixture into evenly sized meatballs approximately 1 to 1.5 inches in diameter. This ensures even cooking and a uniform appearance.
  3. Cook the Meatballs: Heat a drizzle of olive oil in a skillet over medium heat. Add the meatballs in batches without overcrowding the pan. Cook for about 5-7 minutes per side, turning gently until golden brown and cooked through. Alternatively, bake the meatballs in a preheated oven at 400°F (200°C) for about 20 minutes for a hands-off, healthier method.
  4. Make the Tzatziki Sauce: While the meatballs cook, grate the cucumber and squeeze out the excess moisture using a clean kitchen towel. In a bowl, mix Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, salt, and pepper. Stir well and adjust seasoning to taste.
  5. Serve: Plate the warm meatballs and generously drizzle or dollop with the freshly made tzatziki sauce. Garnish with extra chopped herbs like parsley or dill if desired, and enjoy immediately.

Notes

  • Don’t overmix the meatball mixture to avoid tough texture; mix just until combined.
  • Use fresh herbs like parsley, dill, and oregano for vibrant flavor over dried alone.
  • Be sure to squeeze out moisture from the cucumber to prevent watery tzatziki sauce.
  • For uniform meatballs and even cooking, use a small scoop or measure each meatball.
  • Let meatballs rest a few minutes after cooking to allow juices to redistribute for moistness.
