Chicken
- 4 boneless skinless chicken breasts
- Salt, to taste
- Freshly ground black pepper, to taste
- 2 tablespoons olive oil (for brushing)
Garlic Sauce
- 3–4 fresh garlic cloves, peeled and finely minced
- 1/2 cup Greek yogurt or sour cream
- 2 tablespoons fresh lemon juice
- 1 tablespoon olive oil
- Salt, to taste
- Freshly ground black pepper, to taste
Optional Garnish
- Fresh parsley or cilantro, chopped
- Prepare the Chicken: Rinse the chicken breasts and pat them dry with paper towels. Lightly season both sides with salt and pepper. Brush each side with olive oil to prevent sticking and keep the chicken moist during grilling.
- Make the Garlic Sauce: Peel and finely mince the garlic cloves. In a bowl, combine the minced garlic with Greek yogurt (or sour cream), fresh lemon juice, olive oil, salt, and pepper. Whisk together until smooth and creamy. Adjust seasoning to taste.
- Preheat and Grill: Preheat your grill to medium-high heat. Place the chicken breasts on the grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and grill marks appear.
- Rest and Serve: Remove the chicken from the grill and let it rest for 5 minutes to retain its juices. Serve topped generously with the freshly made garlic sauce and garnish with chopped parsley or cilantro if desired.
Notes
- Use room temperature chicken by allowing it to sit out for 15 minutes before grilling for even cooking.
- Don’t overcook the chicken; use a meat thermometer to check for an internal temperature of 165°F (75°C) to keep it juicy.
- Fresh garlic provides a brighter, fresher flavor in the sauce compared to pre-minced or powdered garlic.
- Marinate chicken briefly in olive oil and lemon juice if time allows to enhance tenderness and flavor.
- Always rest grilled chicken before slicing to preserve juiciness and tenderness.
