Instructions

  1. Prepare the Herb Butter: Soften the unsalted butter to room temperature. Finely chop the fresh parsley, thyme, rosemary, and chives. Mince the garlic. In a bowl, combine the butter, herbs, garlic, lemon zest, sea salt, and freshly ground black pepper. Mix until smooth and cohesive. Form the herb butter mixture into a small log on parchment paper, roll it up tightly, and refrigerate while preparing the steak.
  2. Season the Steak: Pat the steak dry with paper towels to ensure a good sear. Brush both sides lightly with olive oil. Season generously with sea salt and freshly ground black pepper. Let the steak rest at room temperature for about 20 minutes to allow the seasoning to penetrate and promote even cooking.
  3. Preheat the Grill: Preheat your grill to high heat, aiming for 450°F to 500°F. Clean the grill grates thoroughly and lightly oil them to prevent the steak from sticking.
  4. Grill the Steak: Place the steak on the hot grill. Cook for about 4 to 5 minutes per side for medium-rare, adjusting time based on thickness and desired doneness. Avoid pressing down on the steak to keep juices inside. Use tongs to flip once for an even, beautiful crust.
