Ingredients

Scale

Main Ingredients

  • 1 lb ground beef (lean or regular)
  • 45 medium russet or Yukon gold potatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 ½ cups sharp cheddar cheese, shredded (or cheese blend)
  • 2 cups beef broth
  • 2 tbsp butter
  • 2 tbsp all-purpose flour (or gluten-free flour blend)
  • Salt and pepper to taste

Optional Herbs & Add-Ins

  • 1 tsp fresh or dried thyme or parsley
  • Optional: diced carrots, bell peppers, or mushrooms (about ½ cup)
  • Optional: pinch of chili flakes or diced jalapeños for heat
  • Optional: fresh rosemary or oregano for flavor twist

Instructions

  1. Prepare the potatoes: Peel and slice the potatoes into thin, even rounds to ensure they cook evenly. Parboil them in salted water for about 5 minutes until just tender but still firm. Then, drain and set aside.
  2. Cook the ground beef mixture: In a large skillet over medium heat, sauté chopped onions and minced garlic in a little oil until fragrant and translucent. Add the ground beef and cook until browned with no pink remaining. Season generously with salt and pepper. Drain excess grease if necessary.
  3. Make the sauce: In the same skillet, melt butter and stir in flour to create a smooth roux. Slowly whisk in beef broth and cook until the sauce thickens. Pour this sauce into the beef mixture and stir to combine evenly.
  4. Layer the casserole: Grease a baking dish. Layer half of the sliced potatoes, then spread the ground beef and sauce mixture over them. Add the remaining potato slices on top. Sprinkle shredded cheese evenly over the top and add herbs if using.
  5. Bake until bubbly and golden: Preheat oven to 375°F (190°C). Bake the casserole for 30-40 minutes or until the cheese is melted, bubbly, and golden brown. Let it rest for a few minutes before serving to allow it to set.

Notes

  • Use a mandoline or sharp knife to slice potatoes uniformly for consistent cooking.
  • Drain excess grease after browning beef to avoid a greasy casserole.
  • Don’t skip the roux; thickening the sauce ensures a creamy, flavorful texture.
  • Let the casserole rest before serving for easier slicing and serving.
  • Fresh herbs add a bright, fresh note that balances the richness.
