Hearty Steak Chili

Hearty Steak Chili is a comforting and flavorful dish featuring tender chunks of seared steak simmered in a rich sauce with beans, tomatoes, and spices. Perfect for chilly evenings, this recipe combines simple ingredients to create a warm, savory, and slightly spicy meal that’s easy to prepare and perfect for leftovers.

Ingredients

Scale

Meat

  • 1.5 lbs sirloin or ribeye steak, cut into bite-sized pieces

Beans and Vegetables

  • 1 cup kidney beans, drained and rinsed
  • 1 cup black beans, drained and rinsed
  • 1 large onion, chopped
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced

Liquids and Canned Goods

  • 1 can (14 oz) crushed tomatoes
  • 2 cups beef broth

Spices and Seasonings

  • 2 tablespoons olive oil
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Prep and Sear the Steak: Season the steak cubes generously with salt and pepper. Heat olive oil in a large pot over medium-high heat. Add the steak in batches to avoid overcrowding, searing each piece until browned on all sides, about 3-4 minutes per batch. Remove seared steak and set aside.
  2. Sauté Aromatics: In the same pot, add more olive oil if needed. Sauté chopped onions, bell peppers, and minced garlic until softened and fragrant, forming the flavorful base for your chili.
  3. Add Spices and Tomatoes: Sprinkle chili powder, cumin, and any additional desired spices. Stir for about 1 minute to toast the spices. Pour in crushed tomatoes and beef broth, stirring to combine all ingredients thoroughly.
  4. Return Steak and Add Beans: Return the seared steak to the pot and add drained kidney and black beans. Bring to a gentle boil, then reduce heat and let simmer uncovered for at least 45 minutes. This slow simmer tenderizes the steak and melds flavors beautifully.
  5. Final Seasoning: Taste the chili and adjust salt, pepper, or spices as needed. If too thick, add a splash of broth or water to reach the desired consistency.

Notes

  • Pat steak dry before searing to achieve a better crust and deeper flavor.
  • Do not skip browning the steak; it creates a rich and savory foundation.
  • Simmer chili slowly on low heat for tender meat and harmonious flavors.
  • Use fresh or newly opened spices for a more vibrant taste.
  • Adjust spice levels gradually to suit your heat preference.
