Instructions

  1. Sauté the Sausage and Vegetables: Turn your Instant Pot to the sauté setting and warm olive oil. Add the sliced andouille sausage and cook until browned and flavorful. Then add diced onions, celery, and bell peppers. Sauté the vegetables until softened and fragrant. Stir in the minced garlic and cook for another minute to release its aroma.
  2. Add Rice, Tomatoes, and Seasoning: Pour in the long-grain rice and stir for one minute to coat with flavors. Add the diced tomatoes, chicken broth, Cajun seasoning, and bay leaves. Mix well, ensuring the rice is fully submerged in liquid for even cooking.
  3. Pressure Cook: Seal the Instant Pot lid and set to high pressure for 8 minutes. This short cook time perfectly cooks the rice while infusing all spices and flavors throughout the dish.
  4. Quick Release and Add Shrimp: Perform a quick pressure release and carefully open the lid. Stir in the peeled shrimp, then reseal the lid and let the residual heat cook the shrimp for 5 minutes on the “keep warm” setting, or until they turn opaque and tender.
  5. Serve and Enjoy: Remove the bay leaves, gently stir the jambalaya, and adjust seasoning to taste if necessary. Serve hot with your choice of garnishes or side dishes.
