Ingredients

Scale

Salmon

  • 4 center-cut salmon fillets (fresh or thawed)
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp olive oil

Sauce

  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, finely chopped
  • 1/4 tsp red pepper flakes (adjust to taste)
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream (room temperature)
  • 1/3 cup grated Parmesan cheese

Garnish

  • 2 tbsp fresh basil or parsley, chopped

Instructions

  1. Prep your ingredients: Finely chop the garlic and sun-dried tomatoes. Measure out the heavy cream and chicken broth to have all ingredients ready before cooking.
  2. Sear the salmon: Heat olive oil in a skillet over medium-high heat. Season salmon fillets with salt and pepper. Place them skin-side down if skin-on, cooking for 4-5 minutes until golden brown. Flip and cook for another 3-4 minutes until just cooked through. Remove salmon from the pan and set aside.
  3. Build the sauce: In the same skillet, add a touch more olive oil if needed. Sauté minced garlic until fragrant, about 30 seconds. Stir in sun-dried tomatoes and red pepper flakes, cooking briefly to release their flavors.
  4. Add liquids and simmer: Pour in chicken broth and heavy cream, bringing the mixture to a gentle simmer. Stir often and allow the sauce to thicken slightly. Add grated Parmesan cheese and stir until melted and the sauce is smooth.
  5. Combine and finish: Return the salmon fillets to the skillet and spoon the creamy sauce over them. Simmer together for 2 minutes to let flavors meld. Sprinkle chopped fresh basil or parsley on top before serving.

Notes

  • Choose fresh, high-quality salmon fillets for best taste and texture.
  • Do not overcook the salmon; remove as soon as it flakes easily with a fork.
  • Use room temperature heavy cream to prevent the sauce from separating.
  • Toast garlic lightly and watch carefully to avoid burning and bitterness.
  • Adjust red pepper flakes to customize spice level to your preference.
