Ingredients

Scale

Salmon

  • 4 salmon fillets (skin-on or skinless, about 6 ounces each)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil or butter, for searing

Sauce

  • 2 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese

Garnish

  • 2 tablespoons fresh basil or parsley, chopped

Instructions

  1. Prepare the Salmon: Pat the salmon fillets dry and season both sides with salt and pepper. Heat olive oil or butter in a large skillet over medium-high heat. Place the salmon skin-side down and sear for 4-5 minutes until the skin is crisp and golden. Flip the fillets and cook an additional 2-3 minutes until the salmon is just cooked through. Remove from the skillet and set aside.
  2. Make the Sauce: Reduce heat to medium and add the minced garlic to the same skillet. Sauté for about 30 seconds until fragrant. Stir in chopped sun-dried tomatoes, then slowly pour in the heavy cream while stirring. Add the grated Parmesan cheese gradually, stirring until it melts and the sauce thickens slightly.
  3. Combine Salmon and Sauce: Return the salmon fillets to the skillet, spooning the creamy sauce over each piece. Let the salmon and sauce simmer together gently for 1-2 minutes to blend the flavors and warm the salmon through.
  4. Garnish and Serve: Sprinkle fresh chopped basil or parsley over the top of the salmon and sauce. Serve immediately alongside your choice of sides for a flavorful and elegant meal.

Notes

  • Use fresh salmon fillets when possible for best texture and flavor; frozen fillets can also be used.
  • Avoid overcooking the salmon; cook just until opaque and flaky to retain moisture.
  • Simmer the sauce gently on medium-low heat to prevent cream from separating.
  • Add Parmesan cheese gradually to ensure a smooth, clump-free sauce.
  • Add fresh herbs only right before serving to maximize aroma and color.
