Instructions

  1. Prepare the Filling: In a medium bowl, beat the softened cream cheese with sugar and vanilla extract until smooth and creamy. Add 1/2 teaspoon lemon juice to brighten the flavor. Set aside while prepping the peaches.
  2. Prepare the Peaches: Wash, peel, and thinly slice the peaches. Toss gently with 1 teaspoon lemon juice to prevent browning and add a fresh tangy note.
  3. Prepare the Crust: Roll out the pre-made pie crust on a lightly floured surface. Using a cookie cutter or glass, cut out small rounds slightly larger than your mini tart pans or muffin tin cups. Gently press each round evenly into the pans.
