Ingredients

Scale

Chicken and Coating

  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 1 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs (or gluten-free breadcrumbs for gluten-free option)
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil (plus extra for brushing)
  • 1 beaten egg (optional, for coating)

Vegetables

  • 2 cups broccoli florets
  • 1 cup cherry tomatoes
  • 1 cup sliced bell peppers (any color)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Finishing

  • 1 tablespoon fresh lemon juice

Instructions

  1. Prepare the Crust Mixture: In a shallow dish, combine grated Parmesan cheese, panko breadcrumbs, garlic powder, Italian seasoning, salt, and pepper. Mix well to form the crispy coating mixture.
  2. Coat the Chicken: Lightly brush each chicken breast with olive oil or beaten egg. Press each piece firmly into the Parmesan breadcrumb mixture, ensuring an even and generous coating on all sides.
  3. Arrange on the Sheet Pan: Lightly grease a sheet pan. Place the coated chicken breasts on the pan, spacing them evenly. Surround the chicken with broccoli florets, cherry tomatoes, and sliced bell peppers. Drizzle the vegetables with olive oil, and season with salt and pepper.
  4. Bake: Preheat the oven to 400°F (200°C). Bake the sheet pan meal for 20-25 minutes, or until the chicken is golden brown and cooked through (internal temperature of 165°F/74°C) and the vegetables are tender and caramelized.
  5. Finish with Freshness: Remove from the oven and immediately squeeze fresh lemon juice over the chicken and vegetables to brighten the flavors before serving.

Notes

  • Use even-sized chicken breasts for uniform cooking and juiciness.
  • Press the breadcrumb mixture firmly onto the chicken to help it adhere during baking.
  • Don’t overcrowd the sheet pan to allow vegetables to roast properly instead of steaming.
  • Use freshly grated Parmesan for the best crisping and flavor.
  • Let the chicken rest for a few minutes after baking to redistribute juices.
  • For extra crispness, place chicken on a wire rack set on the sheet pan.
