Crust
- 1 cup graham cracker crumbs
- 5 tbsp unsalted butter, melted
Cheesecake Filling
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 3/4 cup heavy cream
- 1/3 cup chopped pistachios (lightly toasted)
- 1/2 cup fresh raspberries
Garnish
- Extra fresh raspberries
- Chopped pistachios
- Prepare the crust: Mix graham cracker crumbs with melted butter until well combined. Firmly press the mixture into the bottom of silicone dome molds or mini bowls. Chill in the refrigerator to set while preparing the filling.
- Whip the cheesecake filling: In a large bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing well. Slowly incorporate the heavy cream until the mixture is light, fluffy, and well combined.
- Fold in pistachios and raspberries: Gently fold chopped pistachios and fresh raspberries into the cheesecake mixture, making sure the berries remain intact and ingredients are evenly distributed.
- Fill the dome molds: Spoon the cheesecake filling into the prepared molds, smoothing the tops for a clean, even finish. Tap the molds lightly on the counter to remove air bubbles.
- Chill and set: Refrigerate the filled molds for at least 4 hours or overnight to allow the domes to firm up completely.
- Unmold and garnish: Carefully release the cheesecake domes from their molds. Garnish each dome with extra fresh raspberries and chopped pistachios for an elegant presentation.
Notes
- Use room temperature cream cheese for a smooth, lump-free filling.
- Choose ripe but firm raspberries to maintain shape and freshness.
- Ensure thorough chilling for easy unmolding and optimal texture.
- Silicone molds make releasing the domes hassle-free and prevent damage.
- Lightly toast pistachios to enhance their aroma and crunch.
- For gluten-free version, substitute graham cracker crumbs with gluten-free cookies or almond meal.
- You can substitute cream cheese and heavy cream with vegan alternatives for a dairy-free version.
- Use fresh raspberries to avoid excess moisture; if using frozen, thaw and drain thoroughly.
