Instructions

  1. Cook the Potstickers: Heat a non-stick skillet over medium heat with a bit of oil. Add frozen or fresh pork potstickers, cooking until the bottoms turn golden and crisp, about 2-3 minutes. Then, add water, cover the pan, and steam for another 5 minutes or until fully cooked. Remove and set aside.
  2. Prepare the Noodles: Boil noodles according to package instructions until tender but still slightly firm. Drain, then toss with sesame oil and soy sauce to infuse flavor and prevent sticking.
  3. Make the Cabbage Slaw: In a large bowl, combine shredded green and Napa cabbage, shredded carrots, sliced scallions, and chopped cilantro. In a small bowl, whisk together rice vinegar, sugar, salt, sesame oil, minced garlic, and grated ginger. Pour the dressing over the slaw and toss gently to coat evenly.
  4. Assemble the Bowl: Divide noodles among serving bowls, top with hot potstickers, and spoon the cabbage slaw over the top. Garnish with extra scallions, fresh herbs, chili flakes or sriracha, and toasted sesame seeds or peanuts if desired. Serve immediately for best flavor and texture.
