Ingredients

Scale

Main Ingredients

  • 1 center-cut, trimmed beef tenderloin (about 23 pounds)
  • 1 cup fresh or thawed frozen spinach, chopped
  • 1 cup finely chopped mushrooms
  • 2 cloves garlic, minced
  • 4 oz cream cheese, softened
  • 1/2 cup fresh herbs (thyme, rosemary, parsley), finely chopped
  • 2 tbsp olive oil
  • 1/2 cup breadcrumbs (or gluten-free breadcrumbs for gluten-free option)
  • Salt and pepper to taste

Instructions

  1. Prepare the Beef Tenderloin: Trim any excess fat and silver skin from the tenderloin. Using a sharp knife, carefully butterfly the beef by slicing it horizontally almost through to the other side, then open it like a book to create a flat surface for stuffing.
  2. Make the Stuffing: Sauté chopped mushrooms, spinach, and minced garlic in olive oil over medium heat until soft and fragrant. Remove from heat, then mix in softened cream cheese, breadcrumbs, and chopped fresh herbs until well combined and creamy.
  3. Stuff the Beef: Spread the prepared stuffing evenly across the opened beef tenderloin, leaving a small border around the edges. Carefully roll the tenderloin back up, securing it tightly with kitchen twine or toothpicks to keep the filling intact during cooking.
  4. Sear and Roast: Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the stuffed tenderloin on all sides until golden brown. Transfer the skillet to a preheated oven at 400°F (200°C) and roast for about 20-25 minutes or until the internal temperature reaches 135°F for medium-rare (adjust according to desired doneness).
  5. Rest and Slice: Remove the tenderloin from the oven and let it rest for 10 minutes to allow juices to redistribute. Slice into thick medallions to reveal the festive stuffing inside, then serve warm.

Notes

  • Uniform Thickness: Butterfly the beef evenly for consistent cooking and to keep stuffing in place.
  • Don’t Skip Resting: Resting the meat preserves juices, ensuring each slice is juicy and tender.
  • Use a Meat Thermometer: Helps avoid overcooking, guaranteeing a perfect medium-rare finish.
  • Secure the Roll: Use kitchen twine tightly to prevent stuffing from spilling during roasting.
  • Let the Filling Cool Before Spreading: Prevents the cream cheese from melting too early and keeps stuffing intact.
