Ingredients

Scale

Crust

  • 1 1/2 cups graham cracker crumbs
  • 6 tablespoons melted butter

Filling

  • 24 oz (3 packages) cream cheese, softened
  • 1 cup granulated sugar
  • 4 large eggs, room temperature
  • 1/2 cup sour cream or Greek yogurt
  • 2 teaspoons vanilla extract
  • 1 cup red velvet cake mix (dry)

Topping

  • 1 cup fresh strawberries, sliced
  • Optional: strawberry glaze or jam, warmed and thinned with water for brushing

Instructions

  1. Prepare the Crust: Combine graham cracker crumbs with melted butter in a bowl until the mixture resembles wet sand. Press firmly into the bottom of a cheesecake pan in an even layer. Chill the crust in the refrigerator while preparing the filling.
  2. Make the Red Velvet Cheesecake Filling: In a large bowl, beat the softened cream cheese until smooth and creamy. Gradually add the granulated sugar, beating well after each addition. Next, add eggs one at a time, mixing thoroughly. Stir in sour cream (or Greek yogurt) and vanilla extract until combined. Gently fold in the red velvet cake mix, mixing just until incorporated without overmixing.
  3. Assemble and Bake: Pour the cheesecake filling evenly over the chilled crust, smoothing the top with a spatula. Bake in a preheated oven at 325°F (160°C) for 50-60 minutes, or until the edges are set and the center still has a slight jiggle. Remove from oven and let cool completely.
  4. Chill the Cheesecake: Refrigerate the cooled cheesecake for at least 4 hours or preferably overnight to achieve the best texture and flavor melding.
  5. Add Fresh Strawberry Topping: Arrange the sliced fresh strawberries evenly over the top of the chilled cheesecake. For a glossy finish, optionally brush strawberries with warmed and thinned strawberry glaze or jam.

Notes

  • Use room temperature cream cheese and eggs to ensure a smooth, lump-free filling.
  • Do not overmix the batter to keep the cheesecake airy and prevent cracking.
  • Baking in a water bath is recommended to avoid cracks and promote even baking.
  • Chill thoroughly to allow flavors to meld and texture to firm up.
  • Fresh, ripe strawberries are preferred for the topping for optimal sweetness and texture.
