Ingredients

Scale

Shrimp

  • 1 lb medium to large peeled and deveined shrimp
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt, to taste
  • Black pepper, to taste

Lemon Horseradish Aioli

  • 1/2 cup mayonnaise
  • 2 tbsp prepared horseradish (adjust to taste)
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tsp Dijon mustard
  • Salt, to taste
  • Black pepper, to taste

Optional Garnishes

  • Fresh parsley or dill, chopped
  • Lemon wedges or thin lemon slices

Instructions

  1. Preheat and Prepare Shrimp: Preheat your oven to 425°F (220°C). Toss peeled and deveined shrimp in olive oil, minced garlic, salt, and pepper until evenly coated. Spread them out on a baking sheet in a single layer to ensure even roasting.
  2. Roast the Shrimp: Place the baking sheet in the oven and roast the shrimp for 6-8 minutes, or until they turn pink, opaque, and are just cooked through. Avoid overcooking to keep the shrimp tender and juicy.
  3. Make the Lemon Horseradish Aioli: While the shrimp roasts, whisk together mayonnaise, prepared horseradish, fresh lemon juice, lemon zest, Dijon mustard, salt, and pepper. Adjust horseradish and lemon to your preferred spice and tang levels.
  4. Combine and Serve: Let the shrimp cool slightly after roasting. Serve alongside or drizzled with the lemon horseradish aioli. Garnish with fresh parsley or dill and lemon wedges for extra freshness and color.

Notes

  • Use fresh or properly thawed shrimp for the best texture and flavor.
  • Do not overcrowd the baking sheet to ensure even roasting.
  • Adjust aioli thickness by thinning with a teaspoon of water or lemon juice if desired.
  • Prepare the aioli a day ahead to deepen flavors and refrigerate until use.
  • Watch the shrimp carefully during roasting to prevent rubbery texture.
